I had chili over Fritos with water to drink. Pretty good, too!

we went to Chillis tonight for Matt's birthday.Fajitas for him and me, ribs for daughter and hubby.Oldest son was out at the mall, so panini for him when he got home, turkey and swiss cheese.
Tomorrow is chicken curry, made with corriander, curry powder mild, tomato paste, onions and creamed coconut.I can almost smell it.

Wow - the crock pot recipe really does sound delicious - and easy! I like the idea of the green olves and the peppers!

Shasta, that reminds me of something my sister makes that she calls "Tacos in a Bag." She gets the small bags of fritos, cuts them open down the middle, then tops them with the seasoned ground beef you'd use for tacos, and then everyone can add their favorite toppings - diced tomatoes, lettuce, cheese, sour cream, salsa, etc. Kids love it - big kids, too! :)

Simplicity can be good :) The green olives added a unique taste. I do wish I would have went with 4 jalapeno pepper, rather than 2 for a little tang. I served it over a piece of french bread.
Last weekend I made this:
One pound of ground chicken
Two bundles of asparagus tips
Small can of sliced black olives
Three carrots shredded
Four extra large shallots, chopped
One jalapeno pepper, diced
One small head of broccoli, cut into small pieces
64oz of chicken broth
To be served on a thick slice of LaBrea white/wheat bread
I found the largest shallots, I have even seen before in the store this morning. They were almost the size of a small yellow onion. They had a double bulb inside.

Yum - another winner! I'll definitely try both of these crock pot recipes. They're just the kind of thing I like to make on Sundays in the fall/winter. Thanks!
