(My folks was Iowan so they said casserole, but I adopted "hotdish" out of loyalty to the state of my birth and current residence.)
I would layer everything, adding cheese and salsa and something starchy, like tortillas or rice or chunks of cornbread. I throw in anything else that seems to fit, like poblanos and the candied jalapenos I once got from somebody and now I always get for this specific purpose because they provide an interesting pop of contrasting flavor.
I sprinkle the top with cheese and pepitas and bake for a while.
