What's duxelles?

At first I thought it was some kind of potatoe dish, but probably not.

Yes, creminis and thyme and shallots, deglazed with cognac.

And you didn't die? That's amazing!

Sophia, duxelles are simply sauted mushrooms.

Why not just call them sauted mushrooms?  ???

It's actually more than sauteed mushrooms.  It includes shallots (or onions) and some herbs like thyme or parsley, sauteed down to a paste.

Yes, it's a method of cooking the mushrooms and also a time-honored method of preserving them. Duxelles keep for a long time.

Thx, would never have guessed.

(and don't worry, it's far from the first time I've been called Sofia instead of Sonja :D)

I totally agree!

How much easier life would be if stuff was actually called what it's actually called.

Oh, I'm sorry! I think I did that before a long time ago...I was thinking Sonja, but wrote something else!

No worries, it happens now and then. Also face to face here.

It's actually not that far fetched, Sonja is a Russian diminutive of Sofia.
