Because: If I let this stuff alone, by the end of the summer it will engulf the trees beside the road, by this time next year the woods next to my house will be engulfed with it. It will become a convenient cover for snakes and rats. I have seen the stuff overrun an abandoned house. 

reminds me of wisteria...but it doesnt' even have the 'benefit' of being pretty every spring...

there are areas here so over run with wisteria that in the spring you cant' see the trees it is on...

Actually it has a beautiful purple flower much like Wysteria and it has a really nice smell.
Almost like a grape smell. I actually like the smell of the Kudzu Blossom!

Maybe they use the blossoms to make the jam?

You're right on, Jeff.  I went over to wikipedia to check it out:

The purple flowers of Kudzu are also used to make a sweet jelly. This jelly is well known in the southern United States. This jelly has been described as tasting like either a cross between apple jelly and peach jelly or bubblegum.[citation needed] The viscous substance has a golden yellow color.

I never understood why they're just called "jellyfish"......they sure look like jellyfish to me, with the exception of the dome tht floats atop the water....
