My grandpa was a school teacher and the proud father of 12 kids. He was also a fisher and a farmer. My mom had fresh fish every day in her youth. Fried fish and boiled potato was the main dish.
When I was a child my grandpa sent a big box with fresh herring with the bus in the late autumn - only 30 km so.... - and we salted the herring and had salted, boiled herring and potato for breakfast the whole winter, Monday to Saturday. Sundays we had bacon and eggs....
I can only cook fresh fish. I still buy the fish directly from the fisher and it tastes divine!
