Sophia, duxelles are simply sauted mushrooms.

Why not just call them sauted mushrooms?  ???

It's actually more than sauteed mushrooms.  It includes shallots (or onions) and some herbs like thyme or parsley, sauteed down to a paste. 

Front-Ranger:
Yes, it's a method of cooking the mushrooms and also a time-honored method of preserving them. Duxelles keep for a long time.
