I was just watching figure skating on TV and they did a dance to the soundtrack of the Untouchables, first the main theme and then the death theme (the part where Sean Connery gets shot and dies...) and I got goose bumps! It's such an extraordinary and beautiful soundtrack!

I don't have a top 10 or 20 as such but soundtracks that I love are:
Brokeback Mountain - of course. Just gives me goosebumps and can reduce me to tears.
Gladiator - It's just wonderful.
Last of the Mohicans - I partly hold this movie and it's soundtrack responsible for myself and my better half finally getting it together.
Cal - Small indie movie from years ago that Mark Knophler did the music for. Acoustic guitars with a celtic bent to to it. Very beautiful. If you like the BBM incidental music then give this a try.
I'm sure that there are more but these are the ones that spring to mind right now.

My choices run all over the place.
I love the Brokeback Mountain soundtrack of course! Then there's Dirty Dancing (I'm right there with you, proud owner of the two disc set), and Six Days, Seven Nights (just love the tropical sound, especially on cold days!) although it is slightly cheesy. I'm also a big fan of the Phantom of the Opera soundtrack - the movie and the stage show both. Legands of the Fall also has an amazing soundtrack as well as Schindler's List although it's very haunting. I also really enjoy the music from A Beautiful Mind. And how can you go wrong with Chicago? Great songs. I also really enjoy the soundtrack to Baz Lurhman's Romeo and Juliet, there is some great stuff on there. I like the "indy" feel of the soundtrack for 10 Things I Hate About You and I adore the music from Love Actually as well.
I'm one of those people who can hear a song on a commercial and instantly know what movie it came from. The music just seems to stick with me long term.
