I make this every year for Halloween, so I made it Tuesday because it's always better the next day.  My husband loves it and we can sit with big mugs of it on the porch while we hand out candy.

Moldy Cheese Soup

(only on Halloween the rest of the year we call it Cheddar Broccoli Soup)

3 tablespoons butter
1 medium onion, chopped
1 quart chicken stock
1 cup dry white wine
1 large bunch broccoli
3/4 cup milk
2 cups heavy cream
3 ounces shredded mozzarella
3 ounces freshly grated parmesan
3 ounces crumbled gorgonzola
3 ounces shredded fontina
1/2 teaspoon freshly grated nutmeg
salt and white pepper
croutons

Sauté the onions in the butter in a medium sized stock pot until they are translucent. Peel the tough stem off of the broccoli stalk and slice the stalk into 1/4 inch slices. Break the florets into small pieces. Add the chicken stock, wine, broccoli pieces, milk, and cream to the pot. If desired for Halloween you can add green food coloring until the soup reaches the desired "moldiness". Simmer until the broccoli is bright green and tender. Add the cheese to the soup and cook over low heat until the cheese all melts. Season with nutmeg, salt, and pepper. Serve the soup with your favorite croutons. Do not heat the soup overly much, or it will separate.

Bob and I like Fritos corn chip in ours instead of croutons.

Spiced Apple Cider Martini

Servings: 2

4 oz Trader Joe's® Spicy Cider
4 oz vodka
2 oz brandy
2 oz triple sec
1 oz fresh lemon juice
1 tsp cinnamon
1 tsp superfine sugar
1 tsp brown sugar

Combine all ingredients in blender for 5 seconds. Pour mixture into shaker of crushed ice. Shake and pour into 2 martini glasses. Garnish with thin slice of apple (soaked in lemon water to preserve color) and a cinnamon stick.  Serve in: Cocktail Glass


Caramel Apple Cider Martini

Servings: 1

    * 1/2 cup apple cider
    * 1 ounce vodka
    * 1 ounce butterscotch schnapps
    * ice cube

   1. Put all ingredients into a shaker.
   2. Add ice cubes and shake until cold.
   3. Strain into a martini glass and enjoy!
