All through the film Jack wants Ennis to elope with him, in a manner of speaking (though of course not to wed), but to run away from those who disapprove of their relationship so they can be together for a sweet life...little ranch somewhere...cow & calf operation.
So possibly a bit of wordplay too - Jack nags all through like a Jack-elope. In one word this described Jack, or a directive to Ennis's rescue.
Etymology: Anglo-Norman aloper, to run away from one's husband with a lover - prefix with Jack in this context and it may become a man who runs away from his wife to be with his lover.

Ref Aguirre's warning sign about trespassers - step into this office and that little bit of fate will change your lives forever.
Ennis, the main character, enters first, and in so doing he crosses into the domain of the jackalope.
Both these cowboy's unusual names seem to foretell Ennis's choices and fate, with Twist perhaps the single 'twist' ('bend'/kink) in Ennis's outwardly 'straight' life.
Jackalope Twist and Ennis del Mar - either run off with a gay man called Jack, or remain an island of the sea.
