Honey Barbecue Meatloaf Recipe

1 pound 90% lean ground beef
½ cup plain panko bread crumbs
1 tablespoon plus 2 teaspoons worcestershire sauce
1 tablespoon dijon mustard
4 tablespoons smoky barbecue sauce
1 tablespoon honey
½ teaspoon salt
½ teaspoon black pepper

Preheat oven to 350 degrees F. In a large bowl, use your hands to mix together the ground beef, panko, 1 tablespoon of the worcestershire sauce, the mustard, 3 tablespoons of the barbecue sauce, the salt, and pepper. Do not overwork the meat.
Shape the mixture into a long, thick log and place in an oiled baking dish. Be careful not to pack the meat too tightly or you'll end up with a very dense, tough loaf.
In a small bowl, whisk together the remaining 1 tablespoon barbecue sauce, the remaining 2 teaspoons worcestershire sauce, and the honey. Spread evenly over the meatloaf bake for 45 minutes. Slice and serve!

White Chocolate Cake Recipe

Cake

1 1/2 cups unsalted butter
3/4 cup water
1 cup white chocolate chips
1 1/2 cups buttermilk
4 large eggs
1 1/2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
2 1/4 cups granulated sugar
1 1/2 teaspoons baking soda

White Chocolate Frosting

1 cup white chocolate chips
1 1/2 cups cream cheese, softened
1/3 cup butter, at room temperature
1 1/2 cups confectioners sugar
1 1/2 teaspoons vanilla extract


Cake

Preheat oven to 350F.  Grease and flour 3 - 9 inch round cake pans with butter.

In a medium sized pot melt butter, add water and bring to boil. Once boiling add white chocolate and mix till smooth. Add in buttermilk, eggs and vanilla. Mix till well incorporated. Set aside to cool.

In a separate bowl whisk together flour, sugar, and baking soda. Add this to white chocolate mixture and mix till well combined.

Pour into prepared cake pans and bake for 20 to 25 minutes, or until an inserted toothpick comes out clean. Set to cool, once cool enough to touch turn cake out of pans and let cool completely on a wire rack.

White Chocolate Frosting

Melt white chocolate in a double boiler, or in a pot filed with water and a bowl. Set to cool.

Beat cream cheese and butter until smooth. Slowly add melted chocolate to cream cheese and beat in till well combined. Add sugar and vanilla, and beat for about 10 minutes until well combined.

Garnish with white chocolate. Serve

Hello Lee,

Yes, I was making them for Memorial Day for a bbq I was attending, and then bring extras to work.

I tasted the batter last night, before baking, and it was quite tasty!

However, something happened during the baking process.  The cupcakes came out with a bitter after-taste.  Not sure how or why, but there was no way I could serve these to anyone, so I had to toss them out.

It's hard to explain....almost like sour, burnt butter, but the cupcakes weren't burned, and the batter tasted just fine before I baked it.

Possibly some substance left over in the pan you baked them in. Either that, or your oven.
