If you like rice pudding, you'll like this Portuguese dessert, made with angel hair pasta.
Aletria
6 Cups of milk
2 cups granulated sugar
1 T. of butter
3 egg yolks
1 lemon rind
1 box of angel hair pasta
ground cinnamon
In a large saucepan put 5 cups of milk, sugar, butter and lemon rind. In a small dish put one cup of milk and three egg yolks, and beat well. Break the angel hair pasta into thirds, and place in a bowl. Turn on heat (medium low) and start to stir, slowly bringing the milk mixture to a boil, stirring constantly to prevent burning. Once the boil is reached, add the pasta and cook for 15 minutes, stirring constantly. After 15 minutes, remove from heat, continuing to stir, while slowing adding the milk & egg mixture. Be sure to keep stirring, to prevent pieces of cooked egg from appearning. After the milk/egg mixture is all in, return to the heat, and cook for three more minutes.
After that three minutes is up, turn off the oven, stir for one or two more minutes, and then place onto platter of your choice. Smooth mixture out, and let cool on a countertop. Once cool, use the ground cinnamon to put a design on the top, and refrigerate until ready to serve.
