Onions are part of the seasoning - I added 3 onions (cut in halves) to the pot (along with a few bacon slices). No tomatoes. And as for corn bread, I prob'ly have eaten some in my life, but I really am not certain it appealed to me, as I don't recall it's flavour (or for that matter, when I last ate some).
