I'm marching for her!

Hi friends far and wide,
Fourth of July might not mean anything special to folks outside the U.S., but it is a universal Brokie holiday, IMO! So, I'd like to share special recipes. These can also be foods that are good to savor in midsummer, which will be relevant for Brokies...in the northern hemisphere, at least!

Here's my recipe for Easy Garlic Croutons. Use up all your ends, crust, and overflow bread this way. Assemble, slice and toast bread to desired toastiness. While it is still warm, rub both sides with a cut garlic clove. Butter lightly (do not use butter substitutes) and cut into bite-sized cubes. Store in an airtight bag or container.

Variations: after rubbing with the garlic clove, cube bread and toss with a tablespoon of good olive oil mixed with crushed/ground herbs, such as parsley, sage, rosemary, thyme, oregano, sumac, salt and/or pepper. Or, toss with a small amount of the oil from a jar of anchovies (for real authenticity)!

A Caesar salad is typically made with Romaine lettuce and croutons. I add scallions and green vegetables such as zucchini and sweet green peppers, but never tomatoes.

I would think that strawberry shortcake of Paul's that Chuck mentions would do very nicely for the Fourth of July.  Smiley

I don't have a recipe, but over on the "Up the East Coast" thread, I just wrote about how for family gatherings on the Fourth, my mother used to make baked beans, starting with dried lima beans (you soak them overnight before you cook them) and using lots of brown sugar, molasses, and bacon.

Jeff, this dish sounds very similar to a traditional Swedish dish, bruna bönor - brown beans.

It's also made of beans, sweatened and served with smoked pork.

I hated it in school, and have never eaten it since.

Too bad. Looks good to me!

I guess you'd better go eat a sheep, then.  Grin

I'm sure you'd like it, maybe even better than soup!  Grin

I like beans just fine, but it's the sweetness I couldn't take with this particular dish.

Sheep are good too!   Grin

Hannah brought home this exemplar last year; some classmate had brought it to school.

We're just a month away from 7/4.

This year it falls in the middle of the week, so it's work two days,  day off, work two days, and then the weekend.

I think I could get used to that kind of work week!    laugh
