You must have chosen the so-called "hard mode" where you retain the green letters for each guess. 

You can uncheck it by clicking the cogwheel in the upper right  corner.

Not always.  Especially on the second guess, when you may want to cover more letters.  Obviously, there are lots of different strategies.
