Soup in Boxes and in a Pot

Front-Ranger:
Believe it or not, we don't seem to have a soup thread on this Holiday Forum! I will correct that right now by posting a recipe for Avocado Soup at the request of Sonja. This recipe is from the book Vegetarian Gourmet Cookery, by Alan Hooker, proprietor of the Ojai Ranch House in California. But first, at this link is an article about the restaurant: http://www.saveur.com/article/Travels/The-Roots-of-California-Cuisine

Fun quote from the article: "In those days, the restaurant—now famous for its wine list—was a bring-your-own-bottle place; guests left their white wines to chill in the brook that runs through the garden."

Front-Ranger:
Okay, now that you've read the meta-story, here is the recipe!

Avocado Soup

For each serving, heat in saucepan, but do not let boil:

1 cup whole milk
1 tsp. butter
1/8 tsp. onion salt
dash garlic salt

When hot, add 1/2 ripe avocado, mashed

Beat with a rotary beater constantly while heating the soup. Serve with a dash of paprika, sliced pimento, or other garnish. Serve immediately. Do not keep hot on the stove, as it will develop an acidic taste. May also be served cold.

CellarDweller:
Oh, sounds tasty!

Jeff Wrangler:
Good idea for a soup thread!  :D

I like soup, especially hearty soups.  :)

CellarDweller:
One of my co-workers made some corn chowder and gave it to us at work one pot luck lunch....it was soooo good.
