No, Aguirre is not my intended answer, but I start to realise that my question is more ambiguous than I thought!   

I have to admit that I haven't noticed all the things you mention about Aguirre above.

Here's my intended answer, but I stand corrected on Bobby being the only lefthanded character in the movie. It's obviously debatable, so I won't say anything more about it.

In the Thanksgiving scene, we see that Jenny is holding her fork in her left hand, so she apparently is left-handed, too.

It seems that handedness is fraught with pitfalls!

Speaking as a proud southpaw, I am predominately left handed, but I would peel potatoes with my right hand.  Somehow, I developed my knife skills on the right only.  Probably because I had my fork in my left hand! 

FWIW, I would consider writing a more definitive definer of handedness than the other things mentioned. 

Ennis is certainly right handed.  See below.
