The tv show you're talking about sounds horrible.
I remember watching a show once, and they were talking about food in an Asian country (China or Japan) and how they believed the fish was best if served fresh as possible.
The chef took a cleaver, chopped off the head and tail of the fish, and served the whole thing on a plate like that to the customer.
I know it was a "reflex" because the head was completely cut off, but as the customer went to cut a piece, the mouth of the fish opened and closed, as if it was gasping for air.

You mean he cut the head and tail off, and then put the head, the tail and the middle part of the fish on the same plate, served it to the customer and the head was still moving? YUCK!!!
Why do people want to do things like that? I don't understand it. That is really sickening. I remember when we were in Morocco we went to this restaurant, and they had samples of all the various different foods they served up in the front. They had them all lined up in a row, each under a glass dome. They did this because the menu was written in Arabic and French. So, if you couldn't read the menu, you could point to the dish you'd like to order and they'd cook it up and bring it out to you. Anyway, I was wondering what was IN some of those different selections. Mom told me if it looked good, just order it and don't ask what's in it!
To this day I have no idea what I ordered that day, but it tasted pretty good, whatever it was.
