Hi, Chuck and all,
I always remember how so many of us came together on Memorial Day weekend to celebrate the special movie of ours. And every May I look back on it with fondness. I doubt if that could happen in today's world but I suppose people still love their fandoms and support them with passion.

Maybe you could help me with some advice. With my rapidly growing family, I have a birthday to celebrate, sometimes two or three, every month! How can I make each one special but not get burnt out? I would like to supply a birthday cake for each one so I need an easy recipe, and especially for the icing. I dislike that icing  that comes in a bin. It's too thick and tastes vile.

This is a big day for me...the deadline day for the grant application I'm working on. I'm still waiting for reviewer's comments to come in!

Regarding  the icing, is there a specific type you are looking for?   I make some cream cheese frosting during the holidays, for my pumpkin spice cookies.  My mom loves cream cheese frosting, and it's not very thick.

Here you go, Lee.  This is what I make.

The amount of powdered sugar seems to be up to your taste.  I've seen similar recipes, and they call for 4 cups of sugar.  My parents aren't fond of overly sweet frostings, so I use this one, which calls for 3.  So I would suggest after you mix it, taste it, and if it's not sweet enough for you, add a little more sugar until it's to your liking.

Thanks so much! I see that it calls for a brick of cream cheese rather than the spreadable kind. My I ask whether you have to use a stand mixer or whether it can be made with a fairly powerful hand mixer?
