The loaf I made for myself turned out better than the one for my guest, but it was still tasty, and he asked for seconds, so it couldn't have been bad.  We also had sides of garlic toast and corn on the cob.







Mozzarella Stuffed Meatloaf
 
Prep time - 10 mins  Cook Time - 1 hour  Time to Make It - 1 hour 10 mins
 
Yield: Serves 4 to 6

Ingredients
1 pound ground beef (85%)
1 cup bread crumbs
1 tsp dried basil
1 tsp dried oregano
1 tsp dried parsley
1 tsp salt
½ tsp black pepper
½ cup milk
2 TB worcestershire sauce
8 oz fresh mozzarella, sliced
1 cup ketchup
¼ cup brown sugar, tightly packed
1 TB worcestershire sauce
1 TB red wine vinegar
2 cloves garlic, crushed
⅛ tsp salt
pinch cayenne pepper


Instructions

Preheat oven to 350 degrees. Lightly grease a glass baking pan (9x13) with nonstick cooking spray.

In a large mixing bowl combine ground beef, bread crumbs, basil, oregano, parsley, salt, pepper, milk, and worcestershire sauce. Knead until combined.

Divide meat in half. Shape one half of the meat into the bottom half of the loaf and place in prepared pan. Place mozzarella slices down the center, leaving ½ inch around the ends and sides. Shape remaining half of meat as the top half of the loaf, sealing the edges. This is a free-form loaf so it doesn't need to be perfect.

In a small mixing bowl whisk together ketchup, brown sugar, worcestershire sauce, red wine vinegar, garlic, salt, and cayenne pepper. Pour half of this mixture over the meatloaf, reserving the remaining half for later.

Bake in the preheated oven for 45 minutes.

After 45 minutes, remove from oven and pour the remaining sauce over the loaf.  Increase temperature to 400 degrees and bake for an additional 15 minutes.  Let rest 5 to 10 minutes before serving.

That looks great! If it were a hamburger, it would be what we in Minnesota call a Juicy Lucy.

But it would be cheddar, not mozzarella, and it wouldn't have all those other meatloaf ingredients, which sound good in themselves. I never think to add Worcestershire or vinegar in meatloaf.

Looks very Italian!  :)

busy busy Saturday!

I spent the day with my friend Cor, and helping her and her mother with a house sale.  It was good to see them, I hadn't seen them for a while.

Happy Tuesday!

I've taken this week as vacation time.  I'm  just relaxing around the apartment, but I do have a few plans.   I've made an appointment to see the doctor tomorrow, it's been a while since my last physical.  That should be fun.  ::)

Thursday and Friday will be spring cleaning around the apartment.

I've always had really good blood pressure, but then for some reason over the last four doctor visits it's been in the bad numbers and going up. Last time, my doctor told me to come back and a few weeks so we could deal with it. I haven't yet, and it's been a few months. But I've been going to the gym pretty regularly, and I'm hoping that will help.

there are a few health issues that plague the family history, so I really should monitor my health much more closely.  I'm just glad that all is good.
