I might try that sometime Milli. But I think it would depend on what I put in my salad. Peanuts and cucumbers for example doesn't sound very good. :P

It might be good with some chicken in the salad though!

What do they put in a Thai salad?

The salad I tried had: Iceberg lettuce, bean sprouts, basil, green & red peppers, chicken,...I don't remember cucumber though.  ;)
It was delish.

I tried a Thai salad not too long ago with the most delicious peanut dressing.  Definitely yum.  :)

Oh, Thai salad dressing is wonderful!  Here's one I like:

THAI STYLE GINGER LIME DRESSING   

3 tablespoons peanuts
3 tablespoons lime juice
2 tablespoons rice wine vinegar
1 red chiles, minced
1 1-inch square piece ginger, peeled, grated
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon mint, or lemon grass, chopped
2 tablespoons water

Combine all ingredients in a blender or food processor and process until smooth.

I like to use it as a marinade for chicken - and now I think I've decided on dinner!   :)

That yummy dressing sounds like it would be good with some cold noodles, tossed with shredded carrots, celery, cabbage, sprouts...maybe add some chicken or tofu.  Yum.

dinner was General Tso chicken & rice.

I love it too.  However, the place I went to tonight, didn't make it spicy enough for my tastes.  When I worked at a different location, there was a Chinese place by it, and their General Tso's chicken was so spicy, my nose would run and forehead would sweat.

It was sooooooooooooooooo good!
