It's actually more than sauteed mushrooms.  It includes shallots (or onions) and some herbs like thyme or parsley, sauteed down to a paste.

Yes, it's a method of cooking the mushrooms and also a time-honored method of preserving them. Duxelles keep for a long time.

It's actually not that far fetched, Sonja is a Russian diminutive of Sofia.
