When I have those ingredients I usually make what we in Minnesota call a "hotdish" and what normal people call a casserole. (My folks was Iowan so they said casserole, but I adopted "hotdish" out of loyalty to the state of my birth and current residence.)

I would layer everything, adding cheese and salsa and something starchy, like tortillas or rice or chunks of cornbread. I throw in anything else that seems to fit, like poblanos and the candied jalapenos I once got from somebody and now I always get for this specific purpose because they provide an interesting pop of contrasting flavor.

I sprinkle the top with cheese and pepitas and bake for a while.

Sounds like a Trader Joes thing, is that where you get them?

It does sound like something Trader Joe's might carry, but I think I bought them online. Somebody gave me a jar (unopened) when they were moving and cleaning out their cupboards. I liked them in a Southwest hotdish, so I ordered another jar online.

I've been trying to do more of my shopping at Trader Joe's. When I do, I keep my receipt and then look up how much I would have paid for the same items at my usual (more upscale) grocery. One time it was a $40 difference.
