I know...how about pizza!!!

But it really didn't look like a pizza! Maybe that's because it was square instead of round. :-\

It looked like a salad on bread that was baked in the oven. Sort of. Maybe when I put some ground beef on there I'll call it a pizza! :D

I got a weird idea stuck in my head last night and I decided to make it for lunch today.  :laugh:

I took two slices of bread and lightly toasted them. Then I slathered a bunch of tomato sauce on top, placed them on a greased oven tray and baked them for about 6 minutes at 325 F. Then I put some lettuce on each slice along with a few blobs of sour cream and put them back in the oven for another couple of minutes. It was REALLY good! The next time I make it I may try it with a little bit of browned ground beef. Yummy! :D

Now I just have to figure out what I'm going to name it! :laugh:





I inherited my mother's penchant for left over bolognaise on toast. I guess that is sort of similar.Ground meat with a tomato based sauce. I just toast the bread, butter it and put the bolognaise on top. Also do it with left over shepherds pie, meat. My husband thinks it is gross but I love it.

Breakfast was Cheerios

Lunch was wheat spaghetti and meatballs and sausage.

dinner two multigrain waffles and peanut butter.

I'm posting here while I wait for my soup to finish cooking for dinner.  It's my Mom's interesting recipe for fennel soup.  Accompanied by French pinot noir.  Then later, I'm going to have some angel food cake with fresh strawberries.
 :P

breakfast one cup of coffee
lunch       ham sandwich and lollycake (thats ground malt cookies, condensed milk, then some candy, rolled then 
              sliced)
dinner      pork with soy sauce and chinese flavoured rice risotto (packeted)

Since there was no power in my house when I woke up today, I had to do without coffee, which was okay, since I drink decaf. I had a bowl of cereal with  milk and was feeling rather deprived. Then, we decided to try cooking on the Jotul, which is a Swedish woodstove. We made some delicious ham and eggs and even toasted some English muffins!! Plus plenty of tea, and my husband managed to get his Vesuvius espresso maker to work!!

Is your power back on yet, Front-Ranger? Sounds like you all have the survival tools needed whether it's on or not!  ;D

I had a fish taco, chips and cheese dip, and black beans for lunch. Yum!! Oh yeah--and sweet tea.  :D

No, it's still off and the only reason I'm here is because I escaped to a coffeeshop for a couple hours...cabin fever was getting to me!! Since I live on the Front Range of the mountains, I try to stay prepared for every eventuality, and power outages are to be expected with these wet heavy spring snows!

What kind of lighting do ya'll use when the electricity is off? I have candles and a battery-powered lamp. It's POOP when the power is off tho!  ;) Hope yours is back on soon.
