Since I mentioned this when Chuck asked what anyone was doing this weekend, I have to say that Saturday's trout dinner (actually, a late lunch) turned out really well. A friend baked the trout (4 little ones, so we ate 2 apiece) and I fixed or bought the other food.
As you know, I'm no cook at all, so I got by with some basics, but made a nice meal. Ahead of time, I bought a 16-oz. potato soup (to split for 2 people) and 3 garlic knots at the local pizza place; opened a can of green beans and fixed it with lemon juice; and put some almond slices in a small dish, to fix with lemon and butter and use as the "almondine" in trout almondine. All this went in the frig.
When my friend got here, I quickly reheated the soup and garlic knots and we ate them while the oven was preheating. Then he wrapped the trout (which had been marinating in Italian dressing overnight) in aluminum foil on a cookie sheet, and baked them for 20 minutes. Meanwhile I heated the beans and almond slices in the microwave.
This was my first experience with eating a whole trout at home, that came with a backbone still intact (the restaurants always remove the big bones for you), so that was a little trick to remove, and also to get out as many small bones as possible. I thought the first fish could have been cooked a little more, so we put our second fish back in and heated for 10 more minutes. 30 minutes makes a good trout.
All in all, a good meal.
