I think dicing produces smaller, flatter pieces. So you might dice an onion or pepper but cube meat or cheese or maybe watermelon.

Oh, I wish I'd thought to save it! I ran across a picture yesterday of onions cut up in various ways: diced, sliced, chopped and so on. The caption said each one tastes different, because the substance that gives onions their flavor is contained within, and gets released when it's cut, the more cuts the more oniony flavor.

Which might not be ideal in every context.

I think it also depends on the age of the onion: if it's newly harvested or been stored for maybe months.
